Spinach Pesto Wraps
4 Cups Spinach Leaves
1/2 Cup of Walnuts
1/4 Cup Soaked Sun-Dried Tomatoes
1/2 to 1 Whole Jalepeno Pepper depending on how hot you like it.
1 – 2 Tbs. Fresh Lemon Juice
In your food processor Pulverize Walnuts with Lemon Juice and Soaked Sun-Dried Tomatoes, you may need more than 1 Tbs. of Lemon Juice. Slowly add the other ingredients. This would be enough filling to serve 2. Double or triple for more people. You don’t need a lot of the filling, the key is to eat a lot of lettuce or cabbage (Red or Green) and other vegetables with this. We need leafy greens and other vegetables to get minerals, so eat as much as want.
For the Wraps – Cabbage (Red or Green), Romaine, Boston Bibb, Butter Crunch, or any of your favorite greens. I like to use 2 leaves per wrap, one Cabbage leaf and one Butter Crunch leaf.
For Toppings – Cucumbers, Peppers, Chopped Scallions or Sweet Onion
