Spaghetti With Bolognese Sauce

2 Medium to Large Zucchinis

Spiralize the Zucchini with a Spiralizer or Saladacco and place in Bowls.

Sauce Ingredients:

2 Red Bell Peppers

20 Sundried Tomatoes

2 Mangoes

1 Pint Button Mushrooms

1 Pint Cherry Tomatoes

1 Handful Fresh Basil Leaves

4 Tbs. Fresh Scallions

Optional: Chopped Black Olives

Blend the Red Pepper, Sundried Tomatoes and Mango into a thick paste.  Add the Basil and Scallions to taste.  Chop the Button Mushrooms and Cherry Tomatoes into halves and place in a bowl.  Pour the sauce over the top and mix in.

Serves 2 with leftover sauce for the next day and more creations.  Get creative, come up with something.  Don’t let Raw sauces go more than 2 days, without finishing.
