Mango Spaghetti Wraps
First take 2 good size Zucchini’s peel and spiralize with a Saladacco or Spiralizer into a bowl.
Next:
Into your food processor put the following in this order:
1/2 cup of Parsley
1/2 cup Unsoaked Sun-Dried Tomatoes
If you use garlic put it in now we recommend 1 small clove (we didn’t use any and it tastes great)
1 Tb. Dry Italian Herbs
1/8 -1/4 of a teaspoon of Cayenne Pepper
1 Mango (We Used Ataulfo) chopped
Process the above until everything is blended
Add 1 Red Pepper diced
Add 5 Roma Tomatoes diced
Process again on chop very briefly with pulse
If it needs additional mixing go ahead but don’t over process.
Now pour your sauce over the Zucchini and mix well.
You can wrap in Romaine, Cabbage or any of your favorites. It can get a little messy, you can make a bed of Romaine in a bowl with Mango Spaghetti on top. If you really like wraps like I do, use a fork and take your spaghetti off the top of the bowl and it will not be so juicy in the wrap, the juice will collect on the bottom of the bowl, you can drink it, delicious!
