Curried Carrot Pate Wraps

2 Small to Medium Carrots

3 Tbs Soaked Almonds

1 1/2 Tbs Fresh Lemon juice

1 1/2 Tbs water (only if mixture is a little dry) if carrots are fresh you probably won’t need the water

2 Tsp Organic Curry (No Salt Added)

Process the above in your food processor

For the wraps use any of the following: Red or Green cabbage, any lettuces that are your favorites like, Romaine, Boston Bibb, Butter Crunch, etc. (You don’t need a ton of the filling to really enjoy it, therefore you can eat quite a bit of greens with this dinner that are loaded with minerals)

For toppings use any of the following:  chopped cucumbers, apple, celery, etc.

Serves 2
